Don?t tell the other greens, but kale is my favorite! Packed with iron, calcium, beta carotene, vitamins, potassium, and healthful phytochemicals, it?s also one of the most versatile leafy green veggies around. If you haven?t tried massaged kale yet, well, you?re just cheating yourself! The rubdown?removes the sharp ?cabbage-y? flavor, and magically transforms kale into the perfect raw salad green. This salad comes together quickly, and packs a nutritional power-punch ??while making your taste buds keel over (er, kale over?)?from happiness!

Ingredients

• 1 bunch curly green kale, about 8 -10 large leaves (washed well, stems removed, and leaves cut or torn into bite-size pieces)
• 1 tablespoon extra-virgin olive oil
• 1-1/2 tablespoons red wine vinegar
• 2 oz. (about 2 tablespoons) pine nuts
• 1-1/2 to 2?tablespoons nutritional yeast, to taste
• 1/4 teaspoon salt
• 1/8 teaspoon cayenne pepper (optional, to taste)

Directions

Toast pine nuts in a dry skillet over medium-low heat, shaking or stirring very frequently, for 1-2 minutes until lightly browned.?Set aside.

In a large bowl, sprinkle kale with salt,? and drizzle with olive oil and red wine vinegar.?Toss well, then rub?kale leaves between your palms for 1-2 minutes until softened and pliable.

Crush toasted pine nuts with mortar and pestle, spice grinder, or blender. Add crushed pine nuts, cayenne,?and nutritional yeast to massaged kale. Toss to combine, adjust seasonings to taste, and serve immediately.

Production Notes

Massaged kale salads are? perfect for make-ahead lunches or pot-luck salads, since they won?t get wilty like spinach or other softer greens. To use this salad as a make-ahead dish, chill in an airtight container for up to 2 days, adding the crushed pine nuts just before serving.

For tasty variations, try adding some?diced avocado, slivered red bell pepper, sliced black olives, or capers when you stir in the pine nuts.

Class of 2012: Diploma dilemma for Europe grads

PARIS (AP) ? Estelle Borrell knew she wanted to work in law since she was a teenager, when she interned at a court in Versailles, France. "The lawyers in their black robes, they were like gods to me," said the 24-year-old Parisian.

Borrell studied law at Vienna University, where she dreamed of putting her passion into practice at an international organization. She got a shock when she began working at a Vienna law firm.

"I knew how to resolve cases on paper, but when I got into the law firm it was really ridiculous," Borrell said. "My boss asked me to call a judge and I was absolutely not able to do it. I didn't even have the vocabulary I needed to do a really simple call."

Borrell, who is now back in France seeking work while continuing legal studies in Paris, had found out firsthand what educators, industry and governments across the continent are slowly coming to acknowledge as globalization intensifies competition and a devastating economic crisis swells youth unemployment: Europe's universities, many founded during the Middle Ages, are failing to prepare students for the demands of the 21st century world.

Outmoded teaching, overcrowded classrooms and even broken windows are common complaints by both teachers and students at French universities ? even the Sorbonne, one of Europe's oldest and most illustrious schools. Classes often begin with a hunt for spare chairs as classrooms built for 20 students regularly pack 40 or more. Sometimes students are forced to sit on tables or the floor. On Twitter, students post such complaints as: "Monday morning 9:00 in the constitutional law lecture at Paris 8, freezing my toes off, not very fun."

Recently, a group of overwhelmed instructors at Paris University published an open letter to France's education minister in daily newspaper Liberation to voice their frustration and call for the repeal of a reform that decentralized university control, which they blame for many of the universities' woes.

In Spain, where universities are in even more dire financial straits, the heads of around 50 state-run universities recently made a joint statement warning of "irreparable deterioration" in education as crisis cutbacks choke academic institutions and threaten to hold back economic recovery.

Officials recognize the problem.

The European Commission, the Organization for Economic Cooperation and Development and the Federation of European Employers all have studies under way to examine why the continent's universities are failing. The research aims to identify ways to better match universities' output with the needs of employers, and hopefully help improve the job prospects of Europe's graduates.

The failure of Europe's universities is also reflected in their weak showing in the most closely-watched barometer of university performance ? Shanghai Jiaotong University's annual ranking of the world's universities, which places only two European universities, Oxford and Cambridge, in the top 20. The Shanghai Ranking focuses on research, looking at things such as the number of Nobel Prizes and citations in top academic journals, but experts see a correlation between a faculty's academic caliber and quality of education.

And it's precisely the failings of European university teaching that are now increasingly being put under the microscope.

A recent study in Britain showed that an increasingly large number of graduates are failing to find graduate-level jobs. The Futuretrack survey by Warwick University's Institute for Employment Research showed that the number of graduates still without graduate-level jobs two years after leaving university nearly doubled to 40 percent last year compared to 10 years ago.

Much of the blame can be placed on Europe's economic crisis, but experts say the problem also lies with the universities themselves, which are often accused of imparting theoretical abstraction with little practical application in the real world.

Some experts complain that students need to acquire a whole new way of thinking once they leave university.

"In social sciences, arts, I.T., there is an enormous transition in which you almost have to tell people to forget what they've been studying so that they can see again," said Robin Chater, secretary general of the Federation of European Employers.

Chater's organization represents multinational firms working in the EU, advising them on employment law and other matters, and also functions as a think tank focused on issues of concern to international businesses. Students' lack of practical experience in real-world situations is an emerging cause of concern for the organization's membership, Chater said.

That's an experience Lucy Nicholls, a member of AP's Class of 2012, knows well.

"I'm not saying universities should find you a job, but they should mentally prepare you for the big wide world and make you very much aware of what the climate is like..." said Nicholls, a 22-year-old fashion graduate in London. "It didn't happen for me."

Nicholls describes herself as "sorely disappointed" by her university education in Britain. "I expected to have some sort of lecture on maybe how to go freelance, how to go into the world of fashion because freelance is such a big part of that industry," Nicholls said.

The need to reform Europe's universities has been identified by both the EU Commission and independent experts.

Although graduate unemployment at 5.4 percent is significantly lower than overall youth unemployment, university curricula "are often slow to respond to changing needs in the wider economy," said Dennis Abbott, spokesman for the EU Education Commissioner. In an email response to questions, Abbott said courses should be better tailored to the needs of the labor market, better guidance should be given in selecting courses, and students should be given more opportunities to develop entrepreneurial and work-relevant skills as part of their studies.

That's precisely what Nicholls found lacking in her fashion studies. "I really just wasn't given any opportunities," she said. "I was very disappointed and I think the (university) could and should have done so much more."

Data from the EU Commission show the disparity that exists between the EU and the United States in terms of spending on university education, one factor that has been identified as a cause of European universities' underperformance.

Total public and private spending on higher education in the European Union accounts for 1.3 percent of GDP, compared to 3.3 percent in the United States, according to EU figures cited in a 2008 report by the Brussels-based Bruegel think tank. On a per student basis, that translates to annual spending of euros 8,700 in the EU versus euros 36,500 in the US, Bruegel says.

Borrell, the French law student, saw the effects of this underfunding while in Vienna.

Her law school library shut as early as 4 p.m. some days, and was closed completely on weekends. "You can imagine what this means when exams are approaching and all of a sudden libraries are just literally stuffed with people," Borrell said.

In its report, Breugel recommended that the EU spend an extra 1 percent of GDP annual on higher education, and give universities more autonomy in budgets, hiring and faculty pay as a way of giving the additional spending "more bite."

Moira Koffi, another member of the Class of 2012, last month finished her diploma in corporate communications from the Sorbonne journalism school. Her experience provides an optimistic tale of what Europe's universities may be doing right.

"I'm very satisfied" with how her school, CELSA, prepared her for finding post-graduation employment. "There were courses to prepare you for interviews, and networking was a very important" part of the curriculum, Koffi said.

In her case, it paid off: Koffi has just signed her first work contract with an important public relations firm, working on social media campaigns.

Asian nations giving enthusiastic welcome to 2013

CANBERRA, Australia (AP) ? Fiscal cliff? Recession? Not in Asia, where the first countries to see 2013 dawn will enthusiastically welcome the new year.

Increasingly democratic Myanmar will have a public countdown for the first time. Jakarta plans a huge street party befitting Indonesia's powering economy.

In Sydney, eager revelers camped over Sunday night on the shores of the harbor to get the best vantage points as 1.5 million are expected to see the fireworks show centered on the Sydney Harbor Bridge.

In Hong Kong, this year's 12.5 million Hong Kong dollar ($1.6 million) fireworks display was being billed by organizers as the biggest ever in the southern Chinese city. Police expect as many as 100,000 people to watch, local news reports said.

The buoyant economies of the Asia-Pacific are prepared to party with renewed optimism despite the so-called fiscal cliff threatening to reverberate globally from the United States and the tattered economy of Europe.

But in New Delhi, the festive mood was marred by the death Saturday of a young rape victim.

Several hotels, clubs and residents associations in Indian capital decided to cancel planned festivities and asked people to light candles to express their solidarity with the victim whose plight sparked public rallies for women's safety.

"Let there be no New Year celebrations across the country. It will be a major tribute to the departed soul," said Praveen Khandelwal, the secretary-general of the Confederation of All India Traders, an umbrella group of traders who run shops and businesses across the country.

In a field in Myanmar's largest city, Yangon, workers early Monday were testing a giant digital countdown screen with the backdrop of the revered Shwedagon pagoda.

Arranged by local Forever Media group and Index Creative Village, a Thai major event organizer, the celebration will be the first public New Year countdown in Myanmar, a country ruled for almost five decades by military regimes that discouraged or banned big public gatherings.

"We are planning this public new year event because we want residents of Yangon to enjoy the public countdown like in other countries," said Win Thura Hlaing, managing director of Forever Blossom company, a subsidiary of Forever Media.

With live music performances by singers and celebrities, colorful light shows, food stalls, fireworks and other events at the venue, the countdown is expected to draw 50,000 people, Win Thura Hlaing said.

Jakarta's street party will center on a 7-kilometer (4-mile) main thoroughfare closed to all traffic from nightfall until after midnight. Workers were erecting 16 large stages along the normally car-clogged, 8-lane highway through the heart of the city. Indonesia's booming economy is a rare bright spot amid global gloom and bringing prosperity ? or the hope of it ? to Indonesians.

Spirits in the capital have been further raised by the election of a new, populist governor, who is pledging action in tackling the city's massive infrastructure problems.

Sydney Lord Mayor Clover Moore said about 1.5 million spectators were expected to line the harbor to watch the 6.6 million Australian dollar ($6.9 million) fireworks display, while another 2 million Australians among a population of 22 million would watch it on television.

"This is really putting Australia on the map in terms of welcoming people to the new year," Moore told reporters at the harbor before the event.

Thousands lined the harbor shore in festive crowds under a blue summer sky by late afternoon, their number undiminished by Australian government warnings that the Washington deadlock on the U.S. debt crisis was partly to blame for a slowing Australian economy.

Australian pop singer Kylie Minogue is host for the event.

Despite the somber mood in the Philippines due to devastation from a recent typhoon, a key problem for authorities remained how to prevent revelers from setting off illegal huge firecrackers ? including some labeled "Goodbye Philippines" and "Bin Laden" ? that maim and injure hundreds of Filipinos each year, many of them children.

A government scare tactic, which involved doctors displaying brutal-looking surgical scalpels used for amputations of firecracker blast victims, has not fully worked in the past so health officials came up with a novel idea: Go Gangnam style.

A government health official, Eric Tayag, donned the splashy outfit of South Korean viral star PSY and danced to the tune of his Youtube-hit "Gangnam Style" video while preaching against the use of illegal firecrackers on TV, in schools and in public arenas.

"The campaign has become viral," Tayag said. "We've asked kids and adults to stay away from big firecrackers and just dance the Gangnam and they're doing it."

The number of firecracker injuries has gone down since the campaign was launched early this month.

UFC 155 might not be as epic as some of the UFC?s previous end-of-year cards (you can blame the injury curse for that), but any time the Heavyweight Championship of the World is at stake, it?s must-see TV.

Tonight, defending champ Junior Dos Santos will try to keep the train a-rollin? in a rematch with his old pal?Cain Velasquez.?Meanwhile in the co-main event, lightweights Joe Lauzon and Jim Miller will gobble up as many performance bonuses as they can get their little hands on. Plus, six middleweight contenders ? including Tim Boetsch, Alan Belcher, and Chris Leben ? will swing their ham-hock fists at each other, in the hopes that the most popular kid in school might notice them. Brunson works to the half guard of Leben but the Cat Smasher recovers his full guard. brunson standing and throwing short elbows to the head of Leben. Leben trying to control the wrists and head of Brunson. Brunson stands and passes Leben?s guard, then works into the mount and an arm triangle choke attempt.

Leben rolls and gets a weak half guard back. Brunson lands a big elbow from on top of Leben in his half guard. Minute and a half left. Brunson staying low, trying to keep pressure on Leben. The wrestler begins to get off pot shots again. Leben recomposes to full guard and shoots for an arm bar that is easily defended by Brunson.

Leben is backed up against the cage and tries to stand back up with under a minute left. Leben up to his feet with under thirty seconds left, Brunson briefly takes his back then presses Leben up against the cage. The two separate and the bell ends with them in the center of the ring.

Rd 2

Brunson leads with another high kick. Leben catches it and throws a straight right down the pipe that lands on Brunson?s chin. Brunson wobbled but steadies himself. He shoots in and drives Leben backwards into the fence.

Leben defends the take down attempt well as well as Brunson?s follow up attempts from the double under hooks. Brunson gets tagged on the feet but Brunson shoots in again and scores the take down.

Leben working little hammer shots from the bottom in his full guard. Leben throws up a weak arm bar attempt and Brunson stands up to try striking. Leben cage walks and gets back to his feet. Brunson tries a guillotine choke but Leben easily defends.

Leben lands a big uppercut but Brunson returns fire and stuns Leben with punches of his own. Both men are tired but Leben moves forward. Leben is beginning to score with the round house kick to the leg. Brunson with a one-two punch combination that lands.

Brunson with another straight shot down the pipe to Leben?s head. Leben lands a jab then another leg kick. Brunson closes the distance off of a Leben leg kick and presses Leben backwards against the cage.

Leben frees himself and they are back in the center of the ring. Leben is stalking Brunson and throwing more punches. Brunson looks unsteady on his feet. Leben with another leg kick. Brunson attempts another take down. Leben defends the shot but is working with his back to the cage. Leben circles away from the cage once more and goes back to walking down Brunson. Leben fires a wide looping left hook that misses and the horn sounds.

Rd 3

Brunson lands a glancing lead punch. Brunson lands the double leg take down and presses Leben against the cage. Leben cage walks and returns to his feet. Leben lands another leg kick. Brunson land another big straight punch, shoots for a take down and gets stuffed. Leben throws and misses a big upper cut.

Leben wading in on a tiring Brunson but doesn?t land much. He does land a left that appears to knock mouth guard out. brunson takes Leben down but stands back up after a few moments. Ten seconds left and Leben and Brunson are both swinging big.

The horn sounds and Brunson lets out a celebratory scream instead of accepting a hand shake offer from Leben. Brunson apparently believes that he?s down enough with take downs to win the fight.

Decision time coming up next.

Judges score the fight 29-28 for Derek Burnson. Brunson beats Chris Leben in his UFC debut.

Alan Belcher vs. Yushin Okami II

Belcher is back to avenge his father?s death against former title challenger Yushin Okami. Tough one to call. Belcher insists that Okami is scared of standing and banging with him, bro. Okami says that he?s improved more than Belcher has and that he?ll walk away with another win over the Southern boy.

Rd 1

Belcher?s horrible Johnny Cash tattoo is really distracting from this writer?s play by play blogging, not for nothing. Lots of feinting and big swings from Belcher. Belcher slips and falls after he kicks and Okami lands a jab.

Yushin presses Belcher against the cage, looking for a take down. Okami lands a knee ot the body of Belcher, then tries to land a knee to the head. Belcher doing a good job of defending, then all but asks the ref to separate them. Belcher lands a trip and ends up on top of Okami. He then pulls a guillotine choke and guard on Okami.

The Japanese fighter defends and is inside of Belcher?s guard. Okami presses Belcher against the cage and works for the pass but runs out of real estate as the cage stops him. Okami eventually does pass to side control and looks to have very heavy pressure with his shoudler on Belcher?s neck.

Belcher gets his heels close to his butt and tries to bridge out and escape but Okami?s pressure is too much. Belcher does get to his knees and then tries to get to his feet. Okami locks on a front head lock then transitions to Belcher?s back as the horn sounds.

Rd 2

Okami swings and misses with a big left straight. Okami then presses Belcher against the cage, Belcher lands another take down but then pulls guard working for another failed guillotine attempt. Okami working strikes from on top of Belcher from inside of The Talent?s half guard. Belcher works for a deep half guard sweep but there?s nothing there as Okami?s base is too strong.

Okami now in cross side and the referee makes a malpractice-level decision by standing them up. Horrible. The Nevada State Athletic Commission needs to reconsider the referee?s competence.

Okami quickly brings Belcher back down to the ground, working from on top in half guard again against the cage. Half a minute left with Okami in control from on top on the ground, despite the referee?s attempt to dictate the fight.

The referee stands them up again with twenty seconds left. Okami?s right eye is swollen. the horn sounds.

Rd 3

Okami rushes in looking to clinch right away. Belcher defends and then drops Okami with a big punch following the sage advice of his coach, kick boxing great Duke Roufus. Okami has his legs back under him, stalking Belcher and then rushing him and pressing him against the cage.

For a third time, Belcher gets the better of an Okami take down attempt and lands in mount. Belcher transitions to his back. Okami defends the choke, stands and then frees himself and shoots for another takedown against the cage.

Belcher grabs Okami?s neck and goes for another guillotine choke. Belcher pulls guard and loses the choke. Okami in Belcher?s half guard against the cage with two and a half minutes left. Okami moves to mount but is choosing pressure over being very busy with strikes.

Okami, having established his mount positions, begins to rain down unanswered punches down on Belcher. Belcher turns and gives up his back. Okami gets both hooks in on Belcher, who is face down, and the horn sounds with Okami landing punch after punch from the back.

Decision time coming up.

All three judges score it 30-27 for Okami. Belcher?s four fight win streak is snapped and Okami gets his second straight.

Costa Philippou vs. Tim Boetsch

Rd 1

Few moments of feinting before Boetsch works for a take down. After about thirty seconds of work against the cage, Tim gets the take down. Costa quickly gets back to his feet but Tim stays connected, landing big knees to the body. Costa lands his own and separates.

They are back in teh center of the ring. Tim with a nice rear push kick. Nice inside leg kick from Boetsch. Costa witha left to the body, right to the head, punch combo. Boetsch pushing the pace, lands another leg kick. Tim pushes Costa against the fence but Costa catches Tim with a big upper cut counter.

Tim gets another take down and is inside of Costa?s full guard. Costa controlling Tim?s posture and referee Kim Winslow continues the embarassing pattern of the night with a quick stand up.

Costa takes advantage and lands a nasty body-head punch combo, flush to Tim. Boetsch, unfazed, lands a nasty front kick to the face of Costa. The round ends.

Rd 3

Rogan points out that he has heard?Tim?s corner man Matt Hume?talking about?some injury that the fighter has sustained. As the round begins and Tim shakes out his hand, it appears that he may have broken his hand. Tim lands a big knee to the head of Costa from the clinch.

Tim is cut from an accidental?head butt on his forehead. It looks like his right hand is the hurt one. Boetsch looks for and misses a take down.?Tim lands another front kick to the body. Tim gets an accidental eye poke.

Jon Anik correctly?points out that?it has been a rough few minutes for Boetsch. Goodness gracious,?ain?t that true.

Boetsch gets right back in with minimal rest time. Tim misses with a front kick. Tim now shooting in with minimal set-up and gets stuffed by Costa. Now Costa is on top from the half guard.?Tim continues to bleed. Vosta throwing punches and elbows from on top. Costa throwing more strikes, then stands and walks away at the horn.

Rd 3

Tim tells his coach Matt Hume that he can?t see. Hume asks him if he wants to stop. ?Fuck no,? is Tim?s reply. They get things started for the final round.

Tim with another shot from Kansas. He?s shooting from too far away with no set ups because of his hand and his blurred vision, it appears. Tim may have gotten another cut. Boetsch is butt scooting, then forced to stand up. Tim tries another failed take down and is again in half guard with three and a half minutes.

Boetsch is hurt and cannot see. He is back on his feet. Tim shoots in again, gets stuffed and is back in his own half guard. Tim eats some big shots and the ref steps in and calls the fight off.

Costa Philppou gets the win and stops Tim Boetsch?s frate trane run. Both men are impressive in their own ways in this one. Nasty fight. Good fight.

Joe Lauzon vs. Jim Miller

Both men come out swinging hard with punches in spurts. Miller tries to set up a big upper cut but misses. Miller with a hard leg kick and a hard shot to the body of Lauzon. Miller with another hard body knee that hurts Joe.

Miller follows up with punches. Lauzon gets free then eats a high kick. Miller landing big with more punches to the body and head then another big knee. Lauzon lands his own then gets free. Miller with another buckling leg kick.

Miller with nasty dirty boxing and elbows from the clinch. Miller tries a standing arm triangle hold, Joe defends and frees himself. Lauzon is cut badly and referee Yves Lavigne stops the fight for him to be checked out by the doctor. The cut is over the right eye.

Lawmakers Push To Close Legal Loophole In Leandra's Law ? CBS ...

MINEOLA, N.Y. (CBSNewYork) ? Ahead of the New Year?s holiday, lawmakers and advocates on Long Island are calling for Albany to close a loophole in Leandra?s Law.

Officials called on state lawmakers to swiftly vote to in favor of an amendment to prevent convicted drunk drivers from avoiding the mandatory ignition interlock requirement under the statewide anti-drunk driving measure.

?Leandra?s Law is a good and important piece of legislation but now that we are about a year and a half into the passage of that law, we see and we know that there are loopholes that need to be fixed,? Nassau County District Attorney Kathleen Rice told reporters including WCBS 880?s Monica Miller.??Up to 70 percent of those required to install ignition interlock devices in their cars don?t do it.?

The six-month ignition interlock requires convicted drunk drivers to blow into a device that measures the driver?s blood alcohol level before the car can be started.

?They lie to the court about owning a vehicle, they change vehicle registrations to family members or to friends,? Rice said.

Leandra?s Law was named for 11-year-old Leandra Rosado who was killed in a 2009?DWI crash. The measure, signed on Nov. 18, 2009, makes it a felony to drive drunk with a child in the car.

Leandra was in a car with her friend?s mother when the car flipped.

Leandra?s father Lenny joined lawmakers at the news conference.

Ahead of one of the biggest drinking nights of the year, advocates again urged those who will be out celebrating to select a designated driver or use cabs or mass transit to get around.

?I guarantee you as sure as we are standing here today, people are going to die at the hands of drunk drivers in 2013. I?ve been doing this for over 20 years and there isn?t one year that Long Island families, New York families haven?t been devastated by drunk drivers. It?s time it stops,? said Marge Lee, president of the group Dedicatedd.

Lee?s family was in an accident caused by a drunk driver. Her son was killed and she now walks with a cane.

?Annoy your assemblyman, annoy your senator. Tell them it?s a no-brainer,?

State Sen. Charles Fuschillo and Assemblyman Harvey Weisenberg were also at the news conference calling for a stronger Leandra?s Law.

?You?re not going to get around not having an ignition interlock system or some sort of alcohol monitoring device,? Fuschillo said.

Leandra was killed in October 2009 on the Henry Hudson Parkway, in a car driven by Carmen Huertas, the mother of her best friend. Huertas flipped the car carrying herself and six children, and was convicted under Leandra?s Law for driving while intoxicated. She?s now serving 12 years in prison.
